Bayanin Samfura
Pectinase wani nau'in enzyme ne na abinci kuma an samo shi daga fermentation na wani zaɓaɓɓen nau'in marasa GMO na Aspergillus niger. Ana amfani da shi don hydrolyzes (rushewa) pectin da aka samu a cikin 'ya'yan itace.
Enzymatic Properties
Mafi kyawun pH shine 3.5 tare da kewayon kwanciyar hankali na 2.0 zuwa 7.0. Mafi kyawun zafin jiki shine 50ºC tare da kewayon kwanciyar hankali na 30ºC zuwa 60ºC.

Ayyukan yana da alaƙa da ikonsa na yin amfani da pectin mai nauyi mai nauyi a cikin sarkar poly-galacturonic. Sharuɗɗan karɓa don duk ƙididdigar enzyme shine: NLT 85.0% da NMT 115.0% na ayyana raka'a na ayyukan enzyme.*
